Updated composer.json for symfony/console 7.3

The rector/jack can't be installed because of the error below, that indicates a dependency conflict between nunomaduro/collision and rector/jack packages that require incompatible versions of the symfony/console dependency, so I updated the rector/jack's composer.json for symfony/console 7.3 version and rector/jack was installed without problems.

The release failed to remove all deps. The 0.2.5 works well now
